When to Introduce: 6-8 months (Due to the issue of Nitrates, recommendations for the introduction of carrots varies. Always check with your pediatrician)
Stars: Sweet potatoes are high in Vitamin A and beta carotene as well as potassium; sweet potatoes also contain a good amount of Vitamin E, calcium and folate. Carrots are often one of baby's first food. They are easy to digest and are packed full of nutrients such as Vitamin A, Vitamin C and Calcium.
Ingredients:
1 large sweet potato, peeled and cut into 1/2" slices
1 large carrot, peeled and cut into 1/2" slices
1 medium apple (any type), peeled and cut into 1/2" slices
1 cup vegetable broth
1/2 teaspoon cinnamon
1/4 teaspoon salt (optional)
Directions: Boil the first three ingredients together in salted water until just soft (~15 minutes). Drain everything and allow to cool for 10 minutes. Puree the potato, apple and carrot slices together in a blender or food processor along with the cup of veggie broth, cinnamon and salt (optional). Puree until smooth.
Servings: Fills about 2-3 Little Green Pouches
Modifications: The vegetable broth can be substituted with whole milk or water. If you would like to sweeten this up a bit, add 1-2 tablespoons of brown sugar to the puree.

Another option for sweetening the recipe would be to add some raisins :)
