When to Introduce: 10-12 Months (Always check with your pediatrician)
Stars: Rhubarb is an excellent source of Vitamin C, high in dietary fiber and a good source of calcium. Apples pack in quite a bit of soluble fiber and are also high in Vitamin C.
2 cups rhubarb, about 3 stalks
¼ cup water
Apple juice (if needed)
~ 2 cups store bought applesauce
Directions: Remove the ends from the rhubarb stalks. Wash, and roughly chop. Simmer with water, covered, until very tender, about 10 minutes. Add rhubarb to a blender or food processor, along with any remaining liquid. Puree. (Add a bit of apple juice if needed to get the rhubarb moving.) Add one part pureed rhubarb to two parts applesauce. Fill your reusable baby food pouches and chill.
Servings: Fills about 4 Little Green Pouches
Modifications: Make your own applesauce instead!
