When to Introduce: 9+ months (always check with pediatrician)
Ingredients:
1/4 lb (~1/2 Cup) of Boneless Skinless Dark Meat Chicken (diced)
5 oz (~1 Cup) of Red Bell Peppers (cored and chopped)
12 oz (~2 3/4 Cups) of White Sweet Potato (peeled and chopped)
6 Medium Basil Leaves
1 1/4 Cups of Vegetable Broth
1 Tbsp of Olive Oil
Directions:
Vegetable broth is easy to make and can be made with left-over vegetables or vegetable scraps. I suggest finding a well-rated veggie broth recipe or use a family favorite. You can make a big batch and store it in the freezer or in the fridge for the week. Using broth in baby food recipes adds flavor and nutrients; however, you may always use water instead for convenience.
Stars: This is a yummy summer meal for your baby! Red peppers are loaded with Vitamin C. Since Vitamin C aids in the absorption of iron, you can be sure your little one is getting the most out of the iron in the chicken. Pure goodness!
