Carrot Apple and Ginger Yogurt

When to introduce: 12 months (check with your pediatrician)
Stars: Carrots are easy to digest & are packed with calcium, Vitamin A, & C. Apples are high in fiber, calcium, potassium & Vitamin B6. Greek Yogurt is packed with calcium and protein. Ginger is a great antioxidant & excellent for digestion.
Ingredients:
4 carrots, peeled
2 Gala or Pink Lady apples, cored*
1/2 teaspoon grated fresh ginger
1 1/2 cup plain Greek yogurt
1 tablespoon honey, optional
Directions:
1. Preheat oven to 400°F.
2. Chop carrots and apples into 1-inch sections. Place on a parchment paper lined baking sheet and place in the oven. Roast for 35 to 40 minutes until tender.
3. Transfer the carrots and apples to a food processor or blender. Add ginger and 1/4 cup of water. Process until smooth, about 1 to 2 minutes.
4. In a large bowl combine carrot/apple puree, yogurt, and honey (if using); stir.
5. Serve immediately or pour into the Little Green Pouch and enjoy!
Servings: Fills about 4 Pouches
